My 10 Happy Things. [Zucchini & Quinoa Stuffed Portabellos]





My 10 Things.
I love......[in no particular order.]
1.  My new home, for how much of a pain in the ass this move has become, no matter how much I bitch and complain about the process, what we still have to do, etc. I am SO excited to be in a bigger house and looking forward to all the memories we will be making here.

2.  Babywearing.  Something about it just makes me feel like a skilled parent, even tho I'm not the best at it.  The wraps are so pretty, Tulip loves it and I can get shit done.  Enough said.

3.  My husband.  Obviously this guy has to make the list, he is such an amazing Father and loving husband.  God knew what he was doing when I met this crazy kid.

4.  Workaholics.  It's just a good show.  I mean come on, have you seen the Ninja Turtles episode?!

5.  Leggings.  They're so comfy.  I know you're not supposed to wear them like pants but sometimes I do.  I mean a longer t-shirt, but still.  I know. 

6.  My kids.  My sweet flower girls.  My crazy boys.  These four little people have helped me grow so much, I am forever grateful for their love and patience with me everyday. 

7.  My church.  Be it small but mighty.  It's easy to be discouraged about the things you're not doing, but I'm hoping to remember the things we are.  

8.  Tattoos.  They're just so pretty. 

9.  The beach.  I love the beach so much more now, the smell of the ocean, the color of the water, sand in my toes and usually happy kids all around.  A day at the beach is always a good day.  Unless you get rained out with a newborn and than a homeless guy starts a fire in the rocks and runs away and fire men come and think it was your husband that started the fire.  Than it's just an ok day. 

10.  My new blog designer, Miss Tobie!  Be on the look out!  This space will be looking rad someday soon-ish.  But for now I'll keep working on my writing and getting yummy recipes out!  



Zucchini & Quinoa Stuffed Portabellos

1 lb. grass-fed ground beef
2 tbs. olive oil
5 Portabello Mushrooms
1 medium zucchini, diced
1 cup cooked quinoa
4 slices good cheese, optional
Salt
Pepper

1.  In a large skillet brown the ground beef with the olive oil. Season to taste with salt & pepper.
2.  Once meat is browned add the diced zucchini.
3.  Cook for 5 minutes and than stir in the quinoa, season again with salt & pepper.
4.  Scrape out the gills, the brown inside, of the mushrooms with a spoon.  
5.  Arrange cleaned mushrooms on a baking sheet.  Drizzle olive oil inside each cap, season with salt & pepper.
6. Fill each cap with a scoop of the beef mixture, dividing it equally between the 5 caps.
7.  Bake at 400 degreed for 10 minutes, top with cheese or panko crumbs if desired and bake an additional 5 minutes.

To make vegetarian/vegan:  Replace the ground beed with tofu or more veggies.
I'm also trying to figure out how to work Blogger a little better, especially in the aspect of adding pictures and the stories they tell.  I LOVE taking pictures, all the time, anytime, of anything and I really want to be able to go back through my blog one day and see the pictures and remember this time in our lives just because I know it moves so fast.  I'm trying to figure out the easiest way to do it but for now, they're here.  Pictures top to bottom: 
1.  Lily reading her new Junie B. Jones book under a slide at the park the other day.  She got the book from the tooth fairy the other day and is starting to love reading.  That makes me incredibly happy!
2.  A typical day for me.  I was on my second Nutella iced coffee of the day, taking a break from baking a Chocolate Banana Bundt Cake with a little munchkin tugging on me.  I'm pretty happy. 
3.  Oliver the Grouch.  Just look at it, you know.

What to bring to the home birth away from home. [Nutella Cookie Crisps!]

With my impending labor coming any day now, really ANY DAY.  Hopefully.  I pray.
I was browsing Pinterest and as much as I love that site, like super love it, as I'm sure most of you can tell sometimes the things I see are just ridiculous?  
Or maybe just ridiculous to me.  Like one pin was 100 Toddler Meals!
Goldfish crackers & cut up hot dogs?  Wow, thanks for the tips Pinterest.  But I'll pass.

So I thought what would be a helpful list for me?  I know I have a certain niche I'm looking for and couldn't find it and blog material has been weak lately so I decided to post a list of what I'm bringing for my home birth away from home. 
Also a little side plug and because as always I'm not actually sure where I'm going with any of this, if you are at all interested in home birth

Ask my husband, he had to listen to me busting up for an hour and a half.

Note: I haven't actually had this birth yet so some of these things might be unnecessary, pretty much the same as when you pack a hospital bag and never end up using the yoga mat and birthing ball cause they won't let you get out of bed.  Hmm. 

So first things first! 
Baby stuff:

Car Seat
 [As hippie as we may be we still believe in safety, 
can't wear the baby in a Moby wrap home unfortunately.]

My Mom sent us this cool thing called a Pattem, which is basically like a big round changing pad that you unfold and it has small pockets all around for the baby's stuff.  It's kind of amazing when you breastfeed what a small amount of stuff a newborn really needs besides Mommy!

So in her Pattem is:  2 cloth G-Diapers in XS, 4 diaper inserts, 8 cloth wipes, her little Bee coming home outfit, 2 headband bows [cause I can't resist] Yellow & White, in case she's born with crazy amounts of hair like her big sister! Monogrammed wet bag, cause she's fancy, && a muslin swaddling blanket!

We will probably only be at the midwife's house for about 4 hours or so after birth so this should be plenty!  I think.....I hope.  Like I said I've never done this before so I'm getting kinda Type A on myself thinking everything is going to go wrong last minute.  Ack. 

Now for the Mommy bag!

.1 package giant size pads. [so fun!]
.brush [Just cause I like my hair to be brushed. Haha.]

.Contacts & Solution [I have a feeling my glasses will drive me nuts if I end up doing water birth]

So that's it!  Still sounds like a lot and I guess it is but my midwife has all the fun stuff at her house like the birthing tub, birthing ball, etc.  I really can't wait for this little girl to get here and even to get to experience giving birth again, especially in such a different way than my first 3.

Even 40+ weeks pregnant I still have cravings.  Honestly, I have cravings pregnant or not.  At least I like to call them cravings, everyone else seems to just think I'm picky.  But anyways, I have been wanting CHOCOLATE.  Mmm.  After much searching for things in the pantry I found all the stuff I needed for these guys, and chocolatey they were! 


Nutella Cookie Crisps

1/2 cup Nutella
1/2 cup Brown Sugar
1/2 cup chocolate chips
1/2 beaten egg [Weird I know but I cut the original recipe in half.]
1/2 teaspoon Baking Soda
3 tbs. Flour

[1] Preheat oven to 350 degrees and line cookie sheets with parchment paper.
[2] Mix all ingredients except chocolate chips together.
[3] Gently fold in chocolate chips.
[4] Drop tablespoons of dough onto parchment paper, about 3 inches apart.
These WILL spread!
[5] Bake about 9 minutes, watch them!  
Let cool and enjoy!

They come out kinda soft & chewy in the middle and crunchy on the edges.
Addicting and chocolate overload, for sure eat these with milk!
I also recommend eating them the day of cause if they sit they'll get soft, 
which you might like but I liked them crispier. 

And just so I don't bag on Pinterest too much, forgive me Pinterest! 
I also got this super cool idea the other day and had to do it although Tulip will most likely not be eating anything for at least 9 months!

      I love projects that require me only to buy 1 thing, for less than $5 that I can do myself without nagging Andy to get out the drill or something.

The Nutella Chronicles: Nutella Swirled Banana Bread and Nutella filled mini donut muffins.

I am one of those people that grew up on Nutella.  I don't know how and I don't know where but we have always been a home with Nutella.  My Mom is a junk food junkie, not in a bad way [I love you Mom!] so this was just one of those things, her favorite way to eat it is with Walker's Shortbread cookies.  Sigh.
So I didn't go on a magical trip and discover it as an exotic treat, Nutella is a thing of memories & my childhood.  I hope my kids have those same memories. :) 
I bought a big 2 pack at Costco of the stuff a few weeks ago so I've basically been baking anything that has it, cause really why wouldn't you want a surplus of Nutella and baked goods?  
This is also my first lesson learned in blogging.  I found both of the recipes on Pinterest and like almost every recipe I make I tweaked it to fit what I thought would be better or for what I personally had on hand.  When I went to write this blog I hadn't pinned the exact recipes I used so I had to go through pages of recipes to try and find them so I could reference them here. Errr.  Ok blogging world, lesson learned.  I will start writing my recipes down!  There, you happy?

Nutella Swirled Banana Bread

1 Cup mashed very ripe banana, about 3 medium bananas
1/2 cup brown sugar
1/2 plain Greek yogurt
1/4 cup butter, melted
2 eggs
2 cups AP flour
1 t. baking powder
1/2 t. baking soda
1/4 t. salt
1/2 cup Nutella
 
[1] Combine mashed banana, brown sugar, Greek yogurt, butter & eggs in a stand mixer and mix on medium until well blended.
[2] In a separate bowl whisk the flour, baking soda, baking powder and salt.
[3] Note: I made these into mini loaf pans, cause I had disposable ones and didn't want to clean up but you could use one big standard loaf pan here. It makes 4 mini loaves.
Slowly add flour mixture to wet mixture.  Mix until it just comes together.
[4] Grease pans, I make my own Pam type spray, and spoon batter into bottom.  About halfway up.
[5] Use about 1/8 cup of Nutella per pan, a little more won't hurt anybody.  Kind of layer the Nutella between two layers of batter and then put a big scoop on top.
[6] Use a butter knife or skewer to swirl the Nutella through the layers, I made the mistake of not swirling enough which gave my bread kind of a crispy Nutella top which I kind of liked.
[7] Bake at 350 degrees F, or 300 degrees if your using a Convection oven, which I am while my oven is out of order.  For about 35-40 minutes.
[8] Let cool on a rack, if you can wait that long!



Nutella filled Mini Donut Muffins

   3/4 cup granulated sugar
1 egg 
1 1/2 cups AP flour
2 t. baking powder
1/4 t. salt
1/4 t. Nutmeg
1/4 cup Veggie Oil
3/4 cup low-fat milk
1 t. Vanilla 
Nutella for filling
 
[1]   In a large bowl whisk together sugar, egg, veggie oil, milk & vanilla.
[2] In another bowl whisk together dry ingredients, flour, baking powder, salt & Nutmeg.
[3] Whisk the dry ingredients into the wet until just combined.
[4] Grease a mini muffin pan with cooking spray and fill each one halfway.
[5] Using a teaspoon add a dollop of Nutella to each muffin.
[6] Cover Nutella with a little more batter each, try not to fill too high, I did and they came out ok but it could be a mess.
[7] Bake at 350 degree F for 12 minutes.
[8] When the muffins have cooled down for a few minutes run a butter knife along each edge.
Pop muffins out while they are still warm and then roll in cinnamon sugar! 
[1/4 cup sugar & 1 t. cinnamon]
Makes about 36 mini muffins.
